Effectiveness of enzymatic treatment for reducing dairy fouling at pilot-plant scale under real cleaning conditions

Conventional cleaning with chemical products uses a substantial amount of water and energy to clean the fouling related dairy production, resulting in significant economic costs. We evaluated an enzymatic treatment based on use protease amylase generated indirect plate heat exchanger spray dryer equipment pilot plant, representing real conditions industry. The efficacy removing at 50 °C was comparable that clean-in-place method, alkaline–acid performed maximum temperature 80 °C. Microbiological analysis showed treatments guaranteed adequate hygienic manufactured. Monitoring fluorescence markers, such as tryptophan, riboflavin, Maillard compounds, dityrosine could help improve effectiveness both alkaline cleaning. fulfills industry objectives, saving during washing by reducing product use.
